Beet Burgers

Real color, aren't they stunning?





I had been calling them "beet patties" as I had NO IDEA how they would taste, but we ate them like burgers and YUM.

My audience was my omni, and the omni folks (mother and step-father).

The beets were, of coarse, out of my in-laws garden

This recipe is from "Color Me Vegan" by Colleen Patrick Goudreau ( same Author as "The Vegan Table, also my omni loves ALL her recipes we've tried so far) and is easily GF if you use a GF flour, and GF buns. ALSO make your own soft or dry breadcrumbs with GF bread.

Raw, headed to the oven
Ingredients 
*this made about 6 patties

1 cup shredded beets
3/4 cup cooked Quinoa
3 TBS flour
2 cloves of garlic minced
about 1/4 cup mined red onion
1/8 tsp Cayenne pepper
1 tsp dried parsley
1/2 cup sunflower seeds
1/4 cup sesame seeds
about 1/8 cup oil (start with a bit less I think)
1/4 cup bread crumbs
1.5 Tbs Tamari (or soy sauce)

Method:
Mix all ingredients in a bowl. Adding more flour or quinoa to get the mixture to form patties ( it'll be soft but you don't want it to fall apart super super easy.
Place onto a cookie sheet lined with parchment paper and bake at 375* 12 minutes, then flip (carefully!) and about 10 minutes more or until the patties are firm.

The over all review was wonderful.
I: love love loved them, the beets weren't overwhelming and the flavor was so there
My Omni: pleasantly surprised, would eat them again
My Mom: "It looks like a raw burger but is so much better, in fact I think I would prefer it!"
My SF(aka great cook): Thought they were very tasty

No one had a single complaint! My mom even said she felt really good about what she was/had eaten. I can promise to make these again. In fact the Author says they freeze well, so I think I just make have to make a full batch (12 instead of 6) and freeze them.


We had them on buns with tomato, avocado, and onion (from the in-laws garden) with the lemony garlic green beans and carrot fries. Dessert was Chocolate beet cake with fresh strawberries!

  1. These beet burgers were so yummy! They tasted so much better than regular hamburgers, and I felt so good about eating them, because the ingredients were healthy. The chocolate beet cake was moist and delicious too! My hubby couldn't quit talking about how good the beet patties were. He sang their accolades all the way home!:) Thanks for a delicious dinner Hay!

  2. Interesting... I do have several meat-free burger recipes that I enjoy (wild rice burgers, walnut lentil burgers and black bean burgers) so I am hesitant to add another variety of "burger" to the mix but this has me very curious!! I also was just talking with a coworker on ways to use beets, so I will definitely pass this on to her as well. :)
