Carrot Fries

Also from "Color Me Vegan" I need a little work on these as half of them burnt and a few were under done. The flavor was AWESOME. All 4 of us (My Omni, Mom, and Step Father, and me) all agreed. My mom and SF even liked the somewhat burnt ones. My Omni requested that we try these again, and again he liked them so much.

Carrots, peeled and cut into matchsticks
Olive oil
Salt and black pepper to taste.

Toss in a preheated oven (400*F) and bake until crispy, tossing often to ensure even cooking.
