6 TBS butter<br />
1 onion, diced<br />
2 celery stalks, diced<br />
2 carrots, diced<br />
3 garlic cloves, minced<br />
8-15 potatoes depending on size, chopped<br />
4 cups broth (I used Imagine No Chicken Broth)<br />
Salt and pepper to taste<br />
Cheese for garnish<br />
<br />
Melt butter in a stock pot, then saute onion, celery, carrots and garlic until onions are translucent. Then toss the potatoes to coat, if using a bullion or stock base add it now, then add water (alternately add all your broth now) Cover and simmer for about 20 minutes.<br />
<br />
I then used my Vitamix to blend over half of it and topped with a little spinkle of cheese. Everyone devoured it the 4 (almost 5) year old inhaled it!<br />

I then served it with <a href="http://haylieskitchen.blogspot.com/2011/09/dinner-rolls.html">home made buns</a>..<br />

These boats are decadent and so healthy.<br />

Bake your spaghetti squash at 425* for 20 minutes. Then shred the squash meat and place in a bowl.<br />
<br />
While your squash is cooking: in a skillet cook onions, garlic, meat and potatoes. When they are soft, use seasonings to taste (I used about 1 tsp of each). Stir in the corn salsa (mine was homemade) and beans and heat through. Mix the filling with the squash meat.<br />
Re stuff the squash drizzle some extra salsa on top and top with cheese.<br />

I used my <a href="http://www.tupperware.com/dp/B00T3L2UAA">Pressure Cooker</a> again. This time I put the chicken breast, garlic, and mushrooms into the cooker, with broth to cover. Cooked 11 minutes. Rough chopped it all and threw it onto my homemade pizza dough with cheese!<br />
The best part? While the toppings cooked I made the dough. She mentioned offering a meal plan, WFPB (whole foods plant based) so limited nuts and soy. You can kinda customize it from there. I jumped in and boy week one has been a blast!<br />
I made a family menu from a few weeks back, first there was too much food, for us. I disclaim that cause some people probably eat a lot more quantity than us, but I have a houseful of grazers. The only thing my husband wasn't crazy about. Literally THE ONLY THING, was the Indian spiced potatoes, he isn't wild about anything with INdian Flare, sigh. but he tried it! Ingredients:<br />
3-5 Cremini mushrooms, coarse chopped<br />
1.5 cups of No Beef Broth<br />
1/2 medium onion, diced<br />
3 cloves garlic, diced<br />
2 TBS ketchup<br />
1/2 tsp curry powder<br />
1 tsp seasoned rice vinegar<br />
1 red bell pepper sliced<br />
1 small head broccoli, cut into florets<br />
<br />
1/2 cup-2 cups cooked sprouted ancient grains<br />
<br />
Method:<br />
Use 1/2 cup broth in a skillet over medium and cook mushrooms about 5 minutes.<br />
Remove from heat, being mindful most of the sauce should be absorbed.<br />
<br />
Adding another 1/2 cup broth to pan, add onions and garlic, cook about 3 minutes, add broccoli and cook about 5-7 more. Stir in all remaining ingredients, including mushrooms and bring to a rapid boil to reduce the sauce. Serve over rice<br />

At least I told myself I didn't. If that was a breakfast I would opt not to eat.<br />
Turns out. I DO like oatmeal. A lot. Considering I am still on the fence about grains I am not sure how that really makes me feel.<br />

So far I have had it 3 times on the ultimate reset. I am going to share all three. I loved them all, and all for different reasons.<br />
<br />
1 cup water<br />
1/2 cup old fashioned rolled oats.<br />
<br />
Boil water, add oats and cook for 5 minutes stirring often.<br />
<br />
Then I added 3 oz grassfed yogurt. (Picture one shows a 6 oz container, I mixed half of this in and reserved the other hald) This yogurt had a but of pure maple syrup added to it. If you are using a plain yogurt you could add 1 tsp or so of maple syrup if you needed.<br />

<b>Ingredients:</b><br />
2 TBS Butter<br />
1 medium onion, diced<br />
2 cloves garlic, minced<br />

1/2 cup butter<br />
1/2 cup flour<br />
1 Quart stock<br />
1 quart cream<br />
2 cups shredded carrots<br />
3 heads broccoli cut into florets<br />
<br />
3-4 cups sharp cheddar cheese.<br />
<br />
Method:<br />
Heat 2 tbs butter in a sauce pan, saute onions and garlic until soft.<br />
<br />
In another sauce pan or one without the onions IN it, melt 1/2 cup butter and whisk in flour to make a roux. SLOWLY stir in the stock, then the cream. Allow to simmer about 15 minutes. Then toss in everything left but the cheese.<br />
Simmer 20-30 minutes or until broccoli is soft enough for you. Melt in cheese and eat.<br />

So I have this 1/2 gallon of Carne Asada marinade I picked up at Cash and Carry hanging out in my fridge, normally I prefer to make all my own marinades, they are so much healthier that way, but alas I opted to use the marinade last night. Mind you it was delicious, but the meat never really got 'tender' like a real carne asada steak, so I will have to try it again in the near future.<br />
I also 'creamed' some spinach, which I thought was pretty tasty for cooked spinach.<br />
I would normally recommend serving this with a baked sweet potato or other nutrient dense starch but I was STARVING when I got home and was not willing to wait 18 more minutes for said sweet potato to make it's appearance from the oven.. I found the sauce to be plentiful on the spinach so I would reduce the amounts to what I have listed below.<br />
<br />
1lb flank steak<br />
1/2 cup marinade<br />

1 bag baby spinach<br />
<br />
1/4 cup low sodium broth<br />
2 cloves garlic, crushed<br />
2 TBS parmesan cheese<br />
1 TBS Sour cream<br />

I marinated the steak in the carne asada marinade overnight. Grilled it for about 10 minutes<br />

Mean while I heated the broth to boiling, added the entire bag of spinach and wilted, stirring frequently) for about 5 minutes. Stirred in the garlic, cheese and cream and cooked an additional 2 minutes.<br />
<br />
This came together so fast and had so much flavor.<br />

The result was delicious and amazing.<br />

Yield 2 servings.<br />
1 red container, 1 yellow, 1 blue 2 TBS salsa (which would go into purple)<br />
<br />
1 lb chicken tenders<br />
1 lime<br />
1 TBS taco seasoning (I make my own to keep it clean and know exactly what goes into it)<br />
<br />
1/4 Cup Quinoa<br />
1/2 Can low sodium black beans - rinsed<br />
1/2 cup low sodium or homemade bone/chicken broth<br />
<br />
Pico de gallo or Mango Salsa<br />
Avocado<br />
Sour cream (optional and only included if you don't use an entire 1/2 avocado per serving)<br />

Method:<br />
I tossed the chicken with my taco seasoning and about 3/4 worth of the limes juice. I then threw it onto a grill pan and cooked it until properly grilled (about 10 minutes)<br />
<br />
Meanwhile I cooked the 1/4 cup of quinoa in the broth. Once it was cooked, I added my rinsed black beans and the remainder of the lime juice and allowed the beans to warm,<br />
<br />
Top each portion with 1/2 Avocado and the Salsa (or a little less avocado to allow for sour cream)<br />

Here I tossed some chicken thighs into the slow cooker. Pulled it out to shred and warmed the sauce with it.<br />

Remove chicken and shred.<br />
Toss back into slow cooker with buffalo sauce and reserved broth. Heat on high about 30 minutes.<br />

Serve over salad, in a wrap, however you like!<br />

Thai Pork, this was pretty dang tasty<br />

<b>Thai Pork</b><br />
<br />
* One(2 pound) boneless pork loin, fat trimmed and cut into 4 pieces<br />
* 2 red bell peppers, cut into strips<br />
* 1/2 cup prepared Stir Fry sauce<br />
* 2 T rice vinegar<br />
* 1 t red pepper flakes<br />
* 3 cloves garlic<br />
<br />
Garnishes<br />
* Chopped green onions (about 1/2 cup)<br />
* roasted chop peanuts (about 1/4 cup)<br />
*1 lime sliced into wedges<br />
<br />
Spray slow cooker with cooking spray. Place all ingredients except for peanut butter and garnishes in the slow cooker.<br />
Cook on low for 8-9 hours.<br />
Before serving, remove pork and cut up.<br />

<b>Roasted Chicken w/ vegetables</b> Time approx. 2.5 hours<br />
* 1 roasting chicken 4-5 lbs<br />
* Salt and pepper<br />
* 1 bunch fresh thyme, leaves removed except from 3-5 stems<br />
* 5 garlic cloves minced<br />
* 1 lemon<br />
* 2 tbs melted butter or olive oil<br />
* 1 large yellow onion<br />
* 4 -6 carrots cut into chunks<br />
* 3 medium turnips cut into chunks<br />
* 2 beets cut into chunks<br />
Preheat oven to 400*<br />
Mix thyme leaves, garlic and salt and pepper, juice from the lemon and 1 TBS butter or olive oil in a bowl.<br />
Stuff half the onion , the lemon rind and the 3-5 thyme leaves into the cavity of the chicken.<br />
Rub the chicken all over (including under the skin) with the seasoning rub you made<br />
Place the chicken onto a rimmed baking sheet or roasting pan.<br />
Toss vegetables with 1 TBS butter or oil and season with a bit of salt and pepper, and scatter around chicken.<br />
Roast until chicken is done (165*) approx. 1-1.5 hours<br />
Let chicken rest for 10 minutes before slicing</div>

Method Describes making one 8x8 pan</div>

Cube 3 sliced french bread, place into 8x8 pan. Top with cubed 1/2 cup cream cheese. Spoon about 1/4 pie filling over that. Cube another 3 slices bread and place on top. Blend 6 eggs and 1 cup of milk, pour over bread mixture. Dollop another 1/4 can of pie filling over the top. Drizzle on maple syrup and shake on however much cinnamon you think you'll like.</div>

I then wrapped in plastic wrap and then foil. Dating and labeling.</div>

TO EAT</div>

Thaw completely. Bake foil covered at 350* for 30 minutes, remove foil and bake another 30 minutes. Remove from oven and dish out, adding maple syrup or powdered sugar as you please.</div>
