Balsamic Glazed Beets with Carrots

If you love beets you will really enjoy these

1 large beet, peeled and cut to about 1/4" thick
3 Carrots, peeled and cut to about 1" long
Olive Oil
Sea Salt
Balsamic Vinegar

Preheat oven to 400*

toss carrots and beets in a baking dish with just enough olive oil to coat (less is more). Sprinkle with salt and drizzle with vinegar. Bake about 45 minutes or until beets are fork tender.
