Roasted Vegetable Soup
This is the last bit of my "dinner today dinner tomorrow" recipe from the Roasted Chicken, disclaimer is that if you did cook the chicken on top of the vegetables it wouldn't truly be vegetarian.
Not the "prettiest" but so good.
Now use 5 cups or so of left over vegetables (I did use about 4.5 cups and still felt like we had a ton)
2.5 cup vegetable broth.
Salt and pepper
Heat broth, add veggies and cook about 15 minutes, then blenderize.
Wow. So good. Thick, creamy, bursting with flavor and filling
