Chicken Sandwiches

Dinner last night (or two nights ago) and now, what I did with the left overs.

Okay. YUM, even the husband couldn't stop raving. He loved both dinners and loved that this was so different even though it utilized so many of the same ingredients.

Okay so last night, which actually was the night before, we had Roasted Chicken and Vegetables. It was so good and tender and juicy. However it made a ton! So utilizing the left overs we created an entire second meal.

All you need is
Left over chicken
Left over maple dijon sauce
Mayo
Bread
Onion, a few EXTREMLY thin slices
Cheddar, we used extra sharp
and spinach
And Bread, yep we used that delicious home made variety I just made

Heat broiler.

Slice bread and slather on a bit of mayo on each slice. On one side add some shredded cheddar, on the other top with shredded chicken, a drizzle of sauce and onion.




Heat under broiler to melt cheese, remove from oven and top with spinach and enjoy.



We LOVED this. Seriously. Even though the chicken was virtually identical I didn't feel like we were eating the same thing at all. I'm not sure if the home made bread "made" the recipe but oh man. I can't see using anything else.

We served this with Roasted Vegetable Soup
