Chorizo Burgers

Chorizo, my husband loves it.

The original recipe actually calls for the rolled sausage mixed with ground pork and seasonings. We however love the ground version. So that's what we used.

1 lb chorizo
lettuce
tomato
red onion
cheese
4 Brioche Buns
Avocado Dressing

(Optional topping to save on chopping is just fresh pico de gallo!)

Form meat into patties (best part of fresh ground chorizo is the seasonings are already in it, and pork generates more than enough fat for cooking)

Cook on a grill pan, about 10 minutes.

Top with cheese.


Top those fresh delicious buns with a tiny bit of mayo or just loads of avocado dressing and fixens. Then eat!

Super good! I do think next time I;ll cut the burgers with a little plain pork as these were seriously explosive in the flavor department.
