Cranberry Dressing

Paired with a salad of greens, pear, red onion, feta and hazelnuts this was KILLER.

2 tsp EVOO
2 shallots thinly sliced
1 cup fresh cranberry
1 medium orange juiced and zested
3 TBS balsamic vinegar
3 TBS pure maple syrup
1/4 cup EVOO
dash of salt

Heat 2 tsp EVOO in a skillet and add shallots, cooking until tender, then toss in cranberries and cook until they burst. Remove from heat and blenderize remaining ingredients.


The authors of "Whole Life Nutrition" say it will last in the fridge 10 days

  1. Okay, we are talking freaking fabulous! (Can I use that word and not get into trouble? I just didn't know how to get my point across...) So incredibly good, turkey w/apriocot & fig sauce, salad with homemeade cranberry dressing, twice baked sweet potatoes, homemade delicious rolls, fresh green beans, pumpkin pie ( the crust was made from scratch and the pumpkin filling was made fresh right from a pumpkin, no cans to be found, homemade vanilla ice cream. And all made by a 25 year old wonder!:) She even made most of it the night before, while preparing himemade fetucinni alfredo for Rodney's cousin/neice and a friend. I'm still trying to figure out just whose daughter she really is, because anyone that knows me, knows that I have an anaphylactic reaction to the process or even the mention of of cooking. Absolutely fabulous meal!:)
