Vegetable Frittata with Potato Crust

2 cups grated potato
1/2 tsp salt

2 tsp olive oil or butter (I used one tsp of each)
1 small onion, diced
2 garlic cloves, minced
1 red bell pepper, diced
1 head broccoli, diced
1 1/2 tsp dried Thyme
1/2 tsp black pepper
1/2 tsp or so sea salt
7 Eggs, lightly beaten (depends on size I imagine, mine were smallish)
Grated cheese, optional

Preheat oven to 375*


Grate potato and put in a glass bowl with salt. Let set 10 minutes or so then squeeze out excess water. Pat evenly into a 9" greased pie or cake pan.








In a small skillet heat oil and or butter, and cook onion and garlic a few minutes. In a medium bowl combine cooked mixture, bell pepper, broccoli, seasonings. Stir well.



Add beaten eggs and about 1/2 cup of cheese if using. Pour onto the potato and then bake about 30 minutes or until the eggs are set (you can top the dish with a bit more cheese prior to baking). Enjoy!




We ate ours with a bit of salsa on top. Totally good, I was thrilled to start my day with some good vegetables. Satisfying.
