I stuffed slightly broiled zukes with vegan sausages, and loads of other goodies, the view wasn't as stunning as I would have liked but the flavor was spot on
Zucchini halved, with the guts spooned out
3 field roast sausages, diced (I used Apple Wood Sage)
1 small onion diced
3 garlic cloves diced
1-2 cups spinach, rough chopped
Sauce:
1 cup or so of basil
3 cloves of garlic
2 tomatoes
olive oil
1 avocado
1/2 cup feta
1/4 cup parmesan reggiano
METHOD:
Broil the halved zukes for about 5 minutes. or until just getting tender
In a skillet cook onion, garlic and sausage until tender, throw in spinach and heat just to bright green.
Throw all sauce ingredients into a blender and puree. Pour over sausage mixture and heat. Stir in feta. Fill into zucchini halves, then top with parmesan. Bake at 350* for about 20 minutes.
I think I would love these, (as long as th sausage doesn't tastet like regular sausage:)
