Balmy Basil Salmon

1-2 lbs salmon

1 lemon juiced and zested
1/4 cup olive oil
1/4 cup wheat free tamari
1/4 cup balsamic vinegar
1 cup tightly packed basil leaves
3 cloves of garlic

1 Chopped tomato
1/2 cup feta
1 TBS oil
2 TBS chopped basil

Rinse salmon. Place skin side down in a baking dish.

Combine all marinade ingredients in a blender, pour over fish, cover and let marinate for up to 4 hours.

Pre heat oven to 400*, pour off marinade and cook fish uncovered about 10 minutes for every inch of thickness.

Prepare the topping while the fish is baking. Then top fillets.
