Smashed Black Bean and Yam Quesadillas

1 large yam, peeled and cut into chunks

1 tbs olive oil
1/2 small onion diced
2 tsp cumin
1/2 tsp chili powder
2 cups cooked black beans
salt to taste

tortillas (keep it GF by using GF tortillas)
spinach
cheese (optional)

Preheat the oven to 400*F. Place chunks of yam into a baking dish and add enough water to just over bottom of the pan. Bake about 35 minutes or until tender.

To prepare the cooked beans. Preheat a skillet add oil and cook onions until tender. Add seasonings and black beans and smash with a potato masher or fork until the consistency you desire is reached.

To make quesadillas, In a clean skillet place one tortilla, layer with a bit of bean mixture, some spinach leaves, some cheese if using and then smash some yam on top, place another tortilla on the top and heat until warmed through.




YUM. My bean hating omni hubs liked this one. He dipped his in salsa mixed with some sour cream. Loads of flavor, I of coarse love everything about this so it will naturally be a keeper.
