Marinade:
1/2 cup fresh squeezed OJ
1/2 cup fresh squeezed lime juice
1/2 cup fresh squeezed lemon juice
2 shallot bulbs minced
3 cloves garlic crushed
1 tsp sea salt
1/2 tsp crushed red pepper flakes
Rinse salmon under cold water and place skin side up in a baking dish. Pour marinade over and marinate anywhere from 1-4 hours (we only made it an hour).
Preheat oven to 400*. Drain off marinade, flip fish to skin down, bake 10 minutes per inch of thickness. Enjoy!
My hubs LOVED this, I think it could have marinated a touch longer but all in all it was pretty dang good. We served it with Avocado Salad.
