Breakfast Scramble

Suitable for burritos, in fact, that's how we ate it.

potato. diced
onion, diced
garlic, diced
bell pepper, diced
mushrooms, diced
eggs, mixed
1 drained can diced tomatoes.

Saute all the veggies until crisp tender, add eggs, cook through.

Slater some refried beans in a burrito, top with cheese (optional)  and scramble and EAT!

  1. Wow, what a delicious looking scramble! Love the idea of putting it in a tortilla (but minus the beans of course:)
