Lentil Artichoke Stew

First. YUM. I'm not sure why I have been putting this recipe off, but no longer. I will certainly make this again.

2 whole yellow onions, diced
4 cloves garlic, minced
2 tsp cumin
1 tsp coriander
1 1/2 cups water
1 bay leaf
2 cans fire roasted diced tomatoes
1/4 tsp red pepper flake
1 cup red lentils
12-15 oz artichokes (I used canned grilled)
Salt to taste

In a large pot heat some oil and cook onion until tender, add garlic and seasonings and cook for about 2 minutes then add everything else. ring to a boil then reduce heat and simmer about 30 minutes or until tender and thickened to your taste. remove bay leaf and salt to taste.

We had ours over a small amount Quinoa and with green salads.

 So delicious, spiced just perfectly
