Tuna Casserole

I have made a lot of recipes, but never this.


Boy was it GOOD







4 oz egg noodles
1/2 cup or so bread crumbs
1 TBS butter melted
2 stalks chopped celery
2 chopped carrots
1/4 onion diced
1/4 cup butter
1/4 cup flour
1 cup milk
1 can cream of mushroom soup
1/2 tsp salt
1/2 tsp dry mustard
black pepper to taste
big can tuna, drained
1 cup or so cheddar cheese, cubed
1 roasted bell pepper (optional but YUM)


Cook the noodles according to the package instructions

Saute veggies except pepper about 10 minutes in 1/4 cup butter, the stir in flour, mustard salt and some black pepper. As the roux comes together stir in 1 cup milk and can of soup (or use 2 cups milk) and cook until bubbly (you may be able to skip the roux if using prepared soup).

Combine noodles and tuna in a 8x8 casserole dish, pour over sauce and coat. Mix in cheese and pepper. Top with bread crumbs combined with the 1 TBS melted butter and cook in a 375* preheated oven about 30 minutes.

We will DEFINITELY have this again
