Oatmeal Cookies

The base of these cookies is Vegan, I kept my portion that way with raisins, but added milk chocolate and butterscotch chips to my husbands (get em out of the house already, lol)

His turned out a bit on the crunchy side, I clearly over cooked them, but they were still good he said, and I thought they were a bit more like a crunchy granola cookie bar. Yum. Mine (of coarse) turned out perfect (go figure)

The trick is to pull them out when the edges are firm, but the centers are still soft.

2 TBS ground flaxseed
6 TBS water
1 cup Earth balance, softened
1 1/2 cups brown sugar, packed
1/4 cup sugar
2 tsp vanilla
1 3/4 cups flour
1/2 cup oat bran
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/21 tsp cinnamon
1/2 tsp nutmeg
3 cups rolled oats
1 cup raisins

****the list looks daunting, but the flavor of the cookies is worth it, it also makes  ton!

In a food processor or blender mix water and flaxseed until well blended (almost jelly like). Cream together next 5 ingredients, then add flax mixture and mix to combine.

In a separate bowl combine flour through nutmeg. Add wet to dry and mix JUST TO COMBINE, then stir in rolled oats and raisins.

Using a tablespoon, spoon out dough onto a lined or lightly greased baking sheet, bake at 350 10-15 minutes (see my comment above). Let stand 2 minutes on sheet then remove to a wire rack.
