Mexican Black Bean and Corn soup

Anyone been to Colophon Cafe or Cafe Cafe and had the soup with this title? This soup stole my breath.
My "other omni" joined me for dinner and RAVED even asked to take some for lunch.

olive oil
1/2 onion, diced
1 bell pepper, diced
1 carrot, diced
1 jalapeno "optional"
1 tsp  paprika
1 tsp cumin
1 1/2 tsp oregano
1/2 tsp chili powder
1/2 tsp chipotle chili powder
shake of cayenne
2-4 cups water
2 cups fresh diced tomatoes (from grammie's garden!)
35 oz black beans (canned, drained and rinsed)
1 lb corn
1/2 cup chopped cilanto
1 TBS apple cider vinegar

saute onion until translucent.
Add everything up to spices and saute 3 minutes more,

add spices, stir to coat, allow to heat 1 minute.
Add all ingredients to corn and simmer about 30 minutes.
Remove from heat, stir in cilantro and vinegar.

Then indulge!
