Sunflower Seed Burgers





I start this with admitting two things, A mine fell COMPLETELY apart and B, little man was sleeping, on me, so I didn't mush the whole mixture in the food processor as the recipe indicates, which could be why I had issue "A".
However the flavor was totally spot on!




1/2 Cup uncooked short grain brown rice
1 cup water
pinch sea salt

Cook rice for about 40 minutes and allow to cool slightly, about 20 minutes or so.

1 cup RAW sunflower seeds
1/2 tsp garlic
1/4 tsp dried thyme
1/4 tsp dried oregano
1/4 tsp cumin (do not skip, seriously made it so so YUM)
1/4 - 1/2 tsp herbmare, or seasoning salt
1/2 large carrot, peeled and diced
a small child's handful parsley chopped






Mix first 6 ingredients together in a food processor until fine ground, add carrot and parsley and pulse.















Then add rice and pulse a few more times, do not over pulse or it will get mushy (do not skip or your patties wont form, like mine)

Form patties, then using a bit of olive oil, saute for 3-5 minutes each side in a skillet.


I topped mine with Veganaise, avocado, tomato and lettuce and yum, yum yum, the flavor was killer despite having to pile the crumbly mixture onto the bun, I think it was pretty with the "whole" rice, but certainly skipping the last pulsing step was a huge hindrance. I served this with Oven Fries.
