Homestyle Chicken Stew, with fresh vegetables

I can't cook anything without vegetables! They are seriously wonderful, they add so much depth and flavor to everything, and lucky for me my omni hubby ADORES them so long as they are cooked, and easier for chewing.

Ingredients are listed in the order you use them
olive oil
1/2 onion diced
3 garlic cloves
1tsp thyme
2 boneless skinless chicken breasts - ideally organic
3 carrots diced
3 celery stalks diced
1 large red potato diced
1 large yellow potato diced
3 cups "imagine" organic chicken broth
1/4 cup corn starch (or other thickener)
1 tsp sea salt
1 cup fresh or frozen peas

In a very large skillet with a lid, saute onion in olive oil until it begins to tender. Add chicken, garlic and thyme and saute a few minutes more (about 5?) then add all other ingredients up to the broth. Saute an additional few minutes.
Stir broth and cornstarch together until well blended, add that and salt, cover, and simmer about 20-25 minutes. Stir in peas and simmer 5 more.

Enjoy!

To keep it GF you could serve over Brown rice, Quinoa, or GF noodles, or eat alone with a fresh green salad. If GF is not an issue you can serve it over egg noodles.

  1. Oh my gosh, this stew is absolutely delicious! Lucky me! A certain, special someone brought me a steaming bowl of it for lunch at work today. Sooo good! It will be awesome to have on a cold blustery winter day too.
