Peppery Lime Chicken

First I must add that while I did not consume this meal, I think it will be very worth trying on as vegan or vegetarian alternative.

The pictures do it 0 justice from the smell of the sauce, and I, of coarse, ate darn near the entire bowl of garden fresh (from the in-laws) veggies. I barely steamed them, sprinkled with sea salt, and YUM

Ingredients:
2-4 Chicken Breasts
Zest and juice from 1 large, or two small limes
2 Tbs olive oil
1 clove garlic, minced
1/8-1/2 tsp black pepper

Method:
Broil chicken for about 20 minutes or until brown on one side.
Meanwhile mix all other ingredients in a bowl.

Once chicken is browning on one side, brush with sauce and return to broiler for about 5 minutes.
Flip chicken, brush with more sauce and cook until chicken is done, which for me was about 6 minutes.

  2. haha yes, I wasn't feeling the chicken. My vegetarian heart was calling to me
