Corn Frittata

Breakfast this morning was new and delicious! My father and mother in law's garden is growing strong and we have been using their broccoli and zucchini in, well, everything. Breakfast was no exception.

Ingredients:
Oil for sauteing
Handful of Broccoli florets, ripped up small
One small zucchini sliced
1/2 cup of corn
1/4 cup fire roasted diced tomatoes
4 Eggs
1 tsp dried basil, or 1 Tbs fresh
Cheese (optional)

Method:
beat eggs and basil together.
In a broiler safe skillet, saute veggies until crisp tender, adding tomatoes jus before you think the veggies are done.
Poor eggs over veggies and cook over medium, lifting mixture up to allow uncooked egg to move below.
Once the mixture is almost set, top with cheese and place under the broiler for 4-6 minutes, or until cheese is melty.

Both my husband and I loved the flavor, granted we both agree that the garden fresh veggies played a huge roll.
