Salad for lunch?

Weather we are trying to loose weight, trying to eat more veggies, or just plain love salads (I fall into this category) There are so many great ways to eat salads. All of which can be filling! I think it is a reasonable goal to try to eat one salad a day (remember I said goal *wink)

Here was my lunch today


First let me add YUM, so much yum and so full that I shared it with my boss!

Today was vegetarian but normally I have totally vegan salads, making them extra good for me and not packing in the calories you get from dairy, or animal products, still just as filling.

Use any greens you like (but don't just use iceberg!) Mix and match to get the most out of this meal.

2 cups (probably more) of spinach
2 stalks of celery, diced
1 large carrot chopped
1/2 bell pepper sliced
1/2 avocado  diced
Some onion

I was using up what I had left in my fridge but there is no end to dressings or veggies to add. I used a light greek vinaigrette today (making it vegetarian) but normally I use a "blush" vinaigrette by "Brianna's" that is AMAZING.

So there is my challenge. Strive to eat a salad a day, or at the least try to eat 3 salads a week! If you find that you are hungry still, eat a cup of soup, half a sandwich or some hummus with either crackers or better yet, more veggies!

  2. Salads every day for lunch are my goal! I do pretty well- much better if I am well stocked on different stuff to put on them. Some of my favorites are snap peas, avocado, gorgonzola cheese, and sunflower seeds.
