Cashew Cream over Tortellini

Well this is a fun intro to Vegan meal. The pasta itself is vegetarian, but the sauce is vegan.

For the pasta I used a box of tortellini.

1/2 cup RAW cashews
1 cup or so starchy water from cooking the pasta
2 TBS Nutritional yeast
1 large clove of garlic
1 TBS oil
1 Tsp or so lemon sauce
Salt and pepper to taste

In a blender or food processor, pulse the nuts until they are getting good and ground (careful not to make a paste) Add in your boiling water and blend until smooth

Add in all reaming ingredients and blend until smooth, top over hot pasta and enjoy

This was VERY reminiscent of Alfredo, but not as heavy. SUPER tasty and all around just plain pleasing. It was equally delicious today, as left overs as well.
