Ironically enough I have had some semblance of a menu the entire "break" I took from my blog, however most was things I had already made. Here is the tentative menu plan covering much more than a week this time. I can see this not happening if my beloved keeps me as busy this weekend as we have been for the past several weeks, none the less here is the plan, all new recipes except one *grins*
Thursday: Roasted Red Pepper Sami's - Vegetarian (could easily be vegan)
Friday: Enchiladas Verde - Vegetarian
Saturday: Spaghetti with Lemon Cream Sauce - Vegetarian (could be vegan)
Sunday: Jamaican Bean and Cornbread Bake - Vegan
Monday: Broccoli Cheese Soup - Vegetarian
Tuesday: Better than TUNA sami - Vegan
Wednesday: Braised Broccoli with Sun dried Tomatoes - Vegetarian (could be vegan)
Thursday: Zucchini Basil Pasta - Vegetarian

On another note, all the produce may be coming from a wonderful little place called "Youngstocks" provided they have re-opened for the year. Simply no one can beat the prices they have for fresh produce.
Those recipes look so awesome! Well, as long as I'm not the one grocery shopping for them (look at that LONG grocery list!), or cooking them. I shine in the eating department though:)
