Stuffed Meatloaf and white cheddar shells

Man alive has it been ages since I posted! Well I made something new (for the blog, and not standard) last night so here it is.


Stuffed meatloaf is the name of the game, and so very fun/easy to make!


Ingredients:
Loaf
1 lb or so ground beef
1 small can sliced mushrooms (drained and rinsed)
2 VERY large garlic cloves
1/8 onion, diced (optional)
Italian cheeses
Sauces (Worcestershire, A1, Soy and Teryaki) 
Seasoning salt
about 8 Ritz crackers crumbled (first time I used crackers)


Pasta:
Uncooked noodles
1 cup milk or heavy cream
2 tbs butter
shredded white cheddar


Method:
In a small skillet brown up garlic, mushrooms and onions (in butter, oil or water) until just browning and tender.








In a small bowl combine meat, crumbled crackers and a dash of all the seasonings in and mix well. Split the meat ball into two (one half slightly smaller).
















Flatten the smaller half into a baking dish lined with foil. Curl the edges up just slightly to create a "basin"











Sprinkle a thin layer of Italian cheeses (or a blend) onto the bottom and top with mushroom mix. then layer on more cheese if desired.










Take the remaining meat and form a thin cover over the stuffed meat, blending the edges together to seal them









The take the fully covered loaf and bake at 350* F for approximatley 25-35 minutes






While the loaf is baking, mix milk (or cream) and butter (and a dash of water) into a small sauce pan. Heat until just beginning to boil, slowly add in cheese stirring constantly till melted and blended. Cook noodles and toss to coat (or buy a box mix to save time).  Cook down to thicken up. Know that cream will produce a richer and thicker sauce.





Allow both the meat and sauce to cool slightly before eating and slice and enjoy!

  2. Man, that meatloaf looks awesome! I don't really like hamburger all that much, but stuffed with mushrooms and cheese....unbeatable! Too bad I don't cook anymore. Guess I'll have to invite myself over. Looks delicious!

  3. It doesn't even taste like Hamburger, we'll have to have you over for it soon (Rodney loves his regular meat loaf, but I LOVE this one).. Maybe Christmas eve?
