Baked spud for 1

Well Thursday night, hunger struck faster than I could feasibly cook, so I made a baked spud topped with steamed veggies and a bit of sharp cheddar, and a green salad with a vinaigrette.
Easy as pie and tastier (okay that might be subjective) *grin*
and yes the salad looks "packaged" I had it for lunch, but never quite got hungry enough to eat it.
