Another week gone by already? Wow how time flies.
Time for a new menu.
I would like to bring to light that though I make a schedule sometimes plans change and we don't follow them perfectly. For example of this weeks menu. Thursday's meal was dropped completely and the rest moved days. I think it's important to be able to maintain at least a bit of flexibility in the plan to keep the stress level low.
The theme's this week are: the grill, pasta, Mexican, sandwich, casserole. I find it easy to build a menu around "themes" and of course what's in season.
Sunday: Burger night on home made buns from here - vegetarian
Monday: Spaghetti with homemade marinara and homemade Cheese sticks - vegan
Tuesday: Fajitas with Chipotle Cashew Cream from the vegan table - vegan
Wednesday: Portobello dip sami's on home made hoagies - vegan
For the Omni I am stealing this from my sister Marlboro man samis
Thursday: Cheesy potato bake (one vegan one vegetarian) curtsey's of my Aunt in law
and of course i will be tweaking one a lot to suit my needs.

1 green bell pepper 1 pint Vegan sour cream

Lettuce OMNI: cube steak and burger
Fruit Earth Balance
4 tomatoes Bran
Fruit Cottage cheese
Instant mashed potatoes
Okay, now I think I finally have a decent list. I am planing to make the burger buns so after quite the search today I finally settled on a recipe. Stay tuned!
They all sound good, but Wednesday's sounds especially yummy! Love portabellas. I like the idea of planning around a theme. I haven't heard of anyone doing that before. Great idea! PS: Hope you're having fun w/ the carrot canning!:)

On the canning. stay tuned. one of the recipes ended up making a TON more carrots than we needed then we hardly had enough brine for the actual recipe.. ugh. and dealing with Jalapeno on the fingers now (so no touching eyes nose mouth.. haha you know =))
