I love to cook, I love planning menus and grocery shopping and fueling up my body with delicious home cooked foods. You will see recipes ranging from Vegetarian and Vegan to Omnivorous (SAD to Clean to Paleo) to Raw. All recipes are tried by myself and usually served to my husband. White bean and veggie soup
Stock - vegetable or "NO CHICKEN" chicken stock (my favorite)
1 potato, peeled and cubed
1 can white beans
2 carrots, cubed
1/2 head broccoli cut into florets
1/2 head cauliflower cut into florets
2 stalks celery, cubed
3 cloves garlic minced
1/2 onion, minced or cubed
1 handful spinach chopped
Toss everything but the spinach into a pot and simmer about 30 minutes. Then toss in the spinach and salt and pepper to taste.
You could add noodles, we didn't and thought it was awesome
