Here are some reasons to eat your beets:
- They have ZERO trans and saturated fats.
- Low calorie
- Since they are high in carbohydrates, they give your body INSTANT ENERGY, and are the good carbs, the ones that your body uses as fuel.
- They contain a plethora of goodies: sodium, magnesium, phosphorus, iron, calcium, fiber, Vitamins A and C, and niacin. Also the biggie for MOMS TO BE Folic Acid.
Now here is a recipe that we both (and our 14 month old) adored.
3/4 cup apple cranberry sparkling cider (or plain cider, or sparkling wine)
1/2 cup water
1 TBS packed brown sugar
2 1/2 lbs beets peeled and cut into bite sized pieces
Mix the first 3 ingredients in a sauce pan and heat until sugar is dissolved (ultimately bring to a boil), then add the beets, reduce to a simmer, and cover. Allow to poach for about 45 minutes, or until tender. Drain off poaching liquid and season with salt and pepper to taste.
