Pulled Chicken Sandwich

YUM. Only way to describe this

1-2 lbs shredded chicken (roasted from the deli or like I used, from making broth)
1 medium onion sliced into half moons
1 TBS olive oil
1/3 cup Apple cider vinegar
1/2 cup tomato puree
4 oz diced green chilies
1 tsp thyme
2 TBS honey
1/2 tsp salt


In medium skillet, heat oil and cook onion, add vinegar and cook about a minute more. Then stir in remaining ingredients until boiling, simmer about 7 minutes then stir in chicken and just heat until warmed through. Serve on tasted hoagies and ENJOY!

Very sweet and just a touch spicy flavor. Such a fast recipe making it great for busy weekdays.
