Chicken Broth

I have been DYING to make my own broth. So here it.


1 Whole chicken, cut up into pieces (my boys ((dogs)) at the "goodies") 
8 cups water
1 onion, wedged and unpeeled
4 cloves garlic, unpeeled
3 carrots, rough chopped
3 celery stalks, rough chopped
1 tsp basil
1 tsp thyme
1/2 tsp or so salt
1/4 tsp whole black peppercorns


bring to a boil, simmer as long as you like, I slow simmered the mixture about 4 hours, I was home.. 
Then pulled chicken out and shredded it as it cooled.
Strain mixture and discard veggies.


Clarify stock if you please.


YUM YUM YUM. "They" weren't kidding, home made broth really IS where it's at.
