Rachero Fried Eggs

Stolen from a "Better homes and Garden" cook book, and of coarse tweaked.

*A note in the beginning, make sure you don't get your tortillas as hard as mine were, the boys found them a bit too hard to eat.

Olive Oil
Eggs (2-3 per person)
2 Tomatoes, chopped
1 jalapeno (or a can of diced chilis)
1/8 onion, minced
squeeze lime juice

Optional but nice add-ons
Pepper-jack cheese
sour cream

Dip tortillas in oil and then place into a warm oven.
In the oil (you are frying the eggs, so you'll need more than usual) fry up the eggs.
Mix all remaining ingredients minus the optional in a bowl or blender (to puree if you want)

Place egg on top of the tortilla, top with salsa and cheese

The guys loved the flavor minus the super crunchy tortillas
