Gumbo, green style
Spicy, thick, smells AMAZING while cooking. Definitely a dish you should prep everything first, as it really does all come together rather quickly after that.
Stock (make your own, or use premade)
* I used premade this time, 4 cups
Roux
1/2 cup EB (or butter)
1/2 cup cornstarch/arrowroot powder, (or flour if you aren't GF)
IN your LARGE stock pot melt butter, adding your thickener and cooking until a nice dark orange color (stir constantly). Then add the ingredients bellow and cook about 8 minutes or so.
1/2 medium onion, diced
1/2 red bell pepper, diced
2 celery stalks, diced
3 cloves garlic minced
Stir in your 4 cups broth, keeping the mixture simmering AT ALL TIMES.
Then stir in
1 1/2 tsp thyme
1 tsp oregano
1/2 tsp cayenne
1/2 tsp smoked paprika
2 lbs trimmed, chopped greens (use three kinds)
salt and pepper to taste.
Cook as long as it takes to tenderize the greens. Serve over rice!
(I made purple jasmine)
Awesome flavor. Spicy, warming, filling, so good!
