Chorizo and Eggs

My Hubs favorite. Very simple

1 Package ground Chorizo (pork sausage)
Several eggs
Salsa (the hotter the better in his opinion)

Optional:
Pepperjack cheese
tortillas
Sour cream

Cook sausage in a skillet (NO OIL) until about done. Stir in eggs. Keep the eggs moving to prevent burning. Once the eggs are about done, stir in Salsa to taste and heat through.

Slop into a warmed tortilla with pepperjack and enjoy!
