Baked Apples

4-5 Apples of your choosing (I used Prince and Jonagold)
Earth Balance
Brown Sugar
Cinnamon
Nutmeg
Apple cider (or juice)

Preheat the oven to 350*F




Peel the top of the apple (my omni requested they be totally peeled next time) and core the top portion, using a peeler or knife. Stuff the "well" with a little bit of butter and brown sugar (about 1 TBS Sugar) sprinkle generously with cinnamon. Place into an 8 inch baking dish. Pour a bit of cider or juice into the bottom, cover with foil and bake about 40 minutes (or until the tenderness you prefer). Dist with nutmeg prior to eating!



*the way we ate them with ice cream and whipping cream was NOT vegan if using dairy, but the recipe itself is*
