Mock Tuna

Remember waaaay back I posted this recipe? Well here it is again.

1 can of chickpeas (garbonzo beans) drained, rinsed and flaked in the food processor.
1 carrot peeled and diced
1 stalk celery diced
1/2 - 1 cup chopped walnuts
1/8 cup chopped parsley
1/4 cup veganaise (I use soy free)
1 TBS Dijon
Salt and black pepper
Served over Salad greens makes it carb light/free depending on eating style.

My mom tried some and thought it was delicious!

Not sure if it's all GF but I imagine it is.
