Grilled Vegetable Pizza

Do I even need WORDS to describe how heavenly this was?

Ingredients: 
Yellow Squash
Zuchinni
Olive Oil
Salt
Tomato
*Bell pepper (I forgot to add this!)
1/2 cup Veganaise (or other vegan mayo)
about 2 TBS Vegan pesto (I made my own, with almonds, basil, olive oil and garlic)
Dairy free Mozzarella
tortillas

Method: 
Slice zucchini and yellow squash in half and then quarters, brush or drizzle with a bit of oil and sprinkle with salt, grill approximately 5-7 minutes *if using sweet bell pepper, do the same
Meanwhile mix pesto and vegan mayo in a bowl. toss with tomatoes
Chop grilled veggies and add to tomato mixture.

Grill tortillas on one side, a few minutes. top (grilled side) with veggie mixture and a sprinkle of cheese, and grill again just till cheese is melted. Enjoy!
