Sweet and Sour Pork

Anyhow

Ingredients:
Lean boneless pork
2 TBS Mirin or dry sherry
2 Tbs soy sauce
1 tsp sesame oil
1 cup chicken broth
1/3 cup sugar
1/3 cup rice vinegar
4 tsp corn starch
1 tbs soy sauce

Cooking oil or shortening for seep fat frying

1 beaten egg
1/2 cup corn starch
1/2 cup AP flour (all purpose)
1/2 cup chicken broth
1 TBSW cooking oil
1 clove garlic, minced
3 medium carrots bias slice
1 med green pepper sliced into 1" pieces
1 med red pepper (sweet) cut into 1" pieces
3 green onions
1 8 oz can pineapple chunks in juice, drained
cooked rice

Method:

Trim fat from pork and cut into 3/4 inch cubes. In a bowl mix Mirin, 2 TBS soy sauce and sesame oil. Place pork into this bowl and marinate for 20 minutes or so at room temp.

For sauce - mix together 1 cup broth, sugar, vinegar,  4 tsp corn starch, and 1 tbs soy sauce. Set aside
In a wok or large suace pan heat 11/2-2" of cooking oil or shortening to 365* F
Meanwhile make batter by mixing the egg, 1/2 cup corn starch and flour and broth, stirring until smooth.

Drain pork, pat dry, Dip pork into the batter, swirl to coat. Fry a few pieces at a time in hot oil 4-5 minutes or until Golden. Remove from oil to paper towels to drain and then place in oven to keep warm.

Pour 1 Tbs oil into another large skillet, cook garlic 15 seconds and then add all other veggies and cook just until crisp tender. Remove veggies and stir in sauce, cook over medium heat until bubbly then cook 2 minutes more.stir in pineapple and veggies, then pork.

Serve over rice!

The veggie part was to DIE for! (could make even more vegetarian friendly by using veggie broth not animal broth). I didn't like/eat the pork but my hubby LOVED it.
I can see making this again with chicken or just vegetarian I liked the veggies and sauce SO much!
