Roasted Red Pepper Samis

So I have to admit I stole the recipe from "Vegetarian Times", I also have to admit that the original recipe was Vegan and also served on a baguette. Well last night when we were at the store, the man decided regular bread sounded good. So that's what we got.

To make this spread vegan just use vegan cream cheese instead of dairy, and make sure the bread you are using is vegan (which really I don't understand the concept of NON vegan bread to be honest).

Ingredients:
About 1/4 container cream Cream Cheese
1  Roasted Red Pepper (we cheated and used jarred), drained and diced/chopped
About 1 Tsp Minced Onion
1 Garlic Clove, minced
1/2 Cucumber, Peeled, and diced
Lettuce (I used spinach)
Bread

Method:
Toast your bread
Mix cream cheese, chopped peppers, onion and garlic together.
Spread mixture onto your bread and top with diced cucumber and lettuce
Enjoy!

Now I have to tell you that this was one of the yummiest sandwiches we have had in a while. It was fresh, and SUPER flavorful, and best of all ridiculously fast!

You should definitely give it a try. Even if you aren't all that into cream cheese (my omni is super selective about when it's not gross, and this was one of those times *grin*)

  1. I'll have to try this one. It looks easy enough for me! Lol, Soren hates cream cheese so I make things with it and just don't tell him...most often he likes it too haha!
