Avocado Pesto

Okay, avocado pesto you may ask? Yes, is my response. I stumbled across this recipe on Chef Chloe's blog, and just HAD to try it. (If you want her exact recipe please visit her blog).

The sauce it's self is vegan, however the noodles I served it over were  vegetarian, I look forward to trying this sauce over regular noodles and making a delicious vegan dinner.

1 bunch fresh basil (my package was about 40oz I believe)
3 cloves garlic, peeled
1 avocado, pitted and peeled
1/2 cup olive oil
1/2 cup pine nuts
2 TBS lemon juice

Toss all the ingredients into your food processor or blender and mix until you reach the consistency you desire. (The bright green color I think is because of the flash on my phone). If you want it extra creamy blend longer.

Toss the sauce over hot cooked pasta and enjoy!

All I can say is OH-MY-GOODNESS, THIS is heaven in a bowl. Straight up. Not even kidding. I have tried to make vegan pestos before and in all honesty THIS, THIS doesn't even compare. It was easily the BEST pesto I have ever eaten in my entire existence.

  4. you weren't kiddin'! This is RIGHT up my alley! I have GOT to try this. I wonder how it would be with lime instead of lemon? this week for sure.
