Noodle Alfredo Primavera with Garlic Parmesan bread

Okay, let me start by saying that I personally consider alfredo to be on the borderline of vegetarian. Mainly since it is loaded with dairy and fat, and not all cheese is "vegetarian friendly" (Google rennet for more info.)


That said, it is also not a meal for those watching their weight, or caloric intake (ironically those that support the Atkins Diet allow you to consume it). 
I, however, felt the urge to indulge in a little, it has been a while since I made it at home. After making it once you may find yourself never wanting to consume it again *grin* That said, many people like to indulge every once in a while and boy is it easy to make at home. 


Ingredients"
1 LB or so noodles (we use Capellini most often when I don't make my own)
1 pint heavy whipping cream (the heavier the richer the sauce)
4 TBS butter or butter replacement
2 cloves of garlic, minced
Grated parmesan cheese - to taste (the stinkier the better, and the shaker container type works great)
Vegetables of your choosing


Sourdough, or other bread
2 TBS butter or butter replacement
1 LARGE clove garlic, minced
3 TBS shredded parmesan cheese


*as you can see there in't much healthy or low fat involved


Method


Add water and salt to pasta pot and bring to a boil.
Cut up vegetables and place in steamer. Steam for about 5 minutes and turn off water.
In a medium saucepan, add garlic cloves and butter and melt, do not boil or brown but allow to "tenderize" for about 4-5 minutes. 
Add in cream and heat over medium heat until beginning to boil. Add in parmesan cheese and stir pretty consistently to blend. You may want to taste as you add. 


Toss together pasta, sauce and veggies and enjoy!


For Garlic bread preheat oven to 350* F.
Mix butter, garlic and cheese in a bowl and spread onto bread. bake in oven until just "toasty" and mixture has melted. 


I of course took the picture and then covered mine with black pepper (mm). 
** another great addition is asiago cheese. It adds flavor and dimension to the sauce. I just didn't care for the options I had at the store I visited this past weekend.

  4. Sarah do you make yours from scratch? So easy and you know exactly what goes into it!
    **note if you boil the milk and cream mixture it will "grow" and don't scald the cream

    Oh momma, I am going to play around with vegan options when my new toy shows up and you WILL be able to indulge in them!
    She didn't =( We are needing to have her and joy over soon, in fact we may have to try to make it a date this weekend. but I will cook something a little "lighter" for her.. I know there are a few things she wants to try (hehe)
