Home made hoagies

I know I have posted this before IN other recipes but I decided it needed it's own post for those that are looking just for this one.


Ingredients:
2 1/2 cups flour (I used 1 cup white flour, 1 cup Spelt flour and 1/2 cup Kamut flour)
1 cup water (90*)
1 TBS sugar
1 tsp salt
1 1/2 tsp yeast


Method


Method 1
Toss it all in the bread machine and hit "dough" cycle. 
Once that has completed pull dough out and place into an oiled bowl. Cover and let rise in a warm place until doubled in bulk.
Punch dough down and then split and make into 3 or 4 hoagies (roll by hand) make a slash in the center of each roll
Cover and let rise in a warm place another 30 minutes or so
Spread a little olive oil on top of each roll
bake at 350* F for 20-25 minutes or until golden brown


Method 2
add water sugar and yeast to a mixing cup or bowl and mix together, cover and allow yeast to "proof" (get bubbly)
Mix flour and salt, add water mixture and mix till dough ball in formed.
Pour dough out onto a lightly floured surface and knead until smooth.
Place into a well oiled bowl and cover. Let rise in a warm place 30 minutes or until doubled in bulk.
Punch down dough, split into 3 or 4 pieces and roll into hoagies, again cut a slash down the middle of each roll.
Cover and allow to rise again another 30 minutes or so.
Glaze the top with olive oil and bake at 350* F for 20-25 minutes or until golden brown.

  1. Hmmm... I'm thinking that considering my whopping success with potato rolls tonight, maybe I shouldn't try these? ;)

  2. The potato rolls were good! Just a little dense. which could be too much flour? OR not enough leavening (yeast?).. Bread takes practice. In fact I have made these rolls SEVERAL times and this was the first time they didn't fully rise. they were a little dense but still really tastey! Do you know how to make them GF?
