First week in January

WOW, 2011 already! Where has the time gone? I suppose it is time to come up with a menu and shopping plan for this coming week. This week has been so easy. With my fathers birthday dinner Monday and Christmas/birthday dinner with him and my step mom, my mother and step father and sisters family Thursday.
I really didn't have to plan much. 
Last night after baking fresh bread for my beloveds sandwich I was informed he probably wont be home for dinner tonight. So I think an Amy's Organic Kitchen Pizza is on the agenda.


Next week though, is time to get back into the groove. I can now eat just about everything in site (oh no) so there wont be any pesky food aversions to..well.. avert.


Sunday: Marinated Pan Seared Portobello's with Roasted Garlic potatoes - vegan


Monday: Penne Arrabbiata - vegan


Tuesday: Snowmobiling meeting so eating out


Wednesday: Buffalo "Chicken" strips with Fries - vegan


Thursday: French Toast - vegan


Friday: ... up in the air


Desserts: 
Pumpkin Cheese cake - vegan
Pumpkin Spice Bread - vegan


Perhaps a little heavy on the pumpkin theme but I will have non vegan cookies (supported a co-workers daughter) for the man and I am SO a pumpkin person.


Shopping list 


4-8 Portobello Mushrooms
Fresh Rosemary, Thyme and Oregeno (If I can find)
Bananas
Applesauce


Ground clove
Gram Crackers
Ener-G (egg replacer)
Brown Sugar


Tofutti Cream cheese
milk sub (coconut? soy? not sure yet)
maple syrup (the real stuff)
1-2 cans pureed pumpkin
1 can fire roasted diced tomatoes


Frozen fruit for smoothie
Gardien Chicken tenders


Possibly some frozen goodies or other produce for lunches 


This is the plan as of now at least, but we all know I seem to have a rough time sticking to plans when food is involved.

  3. Wow - you are so organized. I'm in awe. And that french toast! Great idea! Maybe I"ll do that next week!

    Tonight I made chicken w/ ginger, garlic, onion and coconut milk - over rice and veggies. wahooo! but back to crazy real life now that break is over - and back to quick, thoughtless meals. :) I eat vicariously through your blog. :)

  4. Aw thanks sis! it's a work in progress but I find that we eat better (and groceries tend to be a bit more affordable) when I work a schedule like this.

    I think I need to send you a good crock pot cook book! Easy enough to eliminate the dairy, if you need pointers my Vegan cook book is super helpful.

    I'm glad you enjoy eating through my blog! having Rodney around to give his thoughts has been a huge help!
