Cheesy Potato Casserole

Here is an easy side or delicious main dish. It will satisfy your craving for comfort food without a doubt.

1 bag tater tots (thawed)
1 can Amy's Organic Cream of Mushroom
Cheese (cheddar)
about 1/4 container of sour cream (or sub)
Corn flakes (about 3 1/2-4 cups)

Vegetables of your choice: I used the following
1 can green beans rinsed and drained
A large handful of mushrooms diced
1/2 green pepper diced
garlic, diced
onion, diced

In a small skillet use a little oil, butter (EB), or water and sauté all vegetables until tender
In a glass baking dish mix sour cream, soup and cheese. Stir in potatoes, and sautéed vegetables. Stir in 1 1/2 cups crushed corn flakes.
Pat down and top with additional cheese (optional) and corn flakes.
bake in a preheated oven for 20-30 minutes or until bubbly. Salt and pepper to taste
