Vegetarian Chili

Here is a pretty darn amazing vegetarian chili who's recipe was taken from the amazing cook book "the Vegan Table"

I am not sure what i can post legally as far as recipes go, but in all honesty whether you are an avid meat eater, or a complete vegan I really suggest this book for some beautiful healthy side dishes or main courses that will definitely spruce up your dinner table. An Omni (omnivore)  could easily toss in some meat or have some on the side, but you wont miss it with these AMAZING dishes!

Ingredients - I didn't follow the recipe to a "T"but it was still amazing.
3 small cans of beans (or the equivalent dry beans soaked and cooked)
1 small onion, diced
2 stalks celery, diced
1 standard carrot peeled and diced
2-3 cloves garlic, diced
1 can crushed tomatoes
1 can tomato sauce
2 T red wine vinegar
Basil
Italian seasonings
Chili powder
small amount of oil

In the stock pot you plan to use for the entire chili, add a small amount of oil or water for sauteing and add the garlic, onions and celery, saute until the onions are just about translucent. Add in your seasonings and let cook a few more minutes. Add in the crushed tomatoes and tomato sauce and vinegar, and simmer for about 10-15 minutes. Stir in beans and let simmer for anywhere from 20 minutes to about an hour.

Serve with Corn bread and a bit of grated "cheese" if you like.
