Pesto?

Home made Pesto is a breeze! I can't believe that i hadn't tried to make it before. My Husband who normally thinks pesto is a little, bland, asked for more for lunch the next day. It really does pay to make it from scratch.

Ingredients for Pesto
Dry pasta (we use whole grain, some may use gluten free)
about 2 cups fresh Basil
about 1/2 cup Extra virgin olive oil
1/4 -1/2 cup raw pine nuts
Cherry tomatoes
2-3 cloves garlic
salt and pepper to taste
Grated Parmesan (optional)
*to veganize try a dash of lemon juice

Cook pasta according to package directions.
In a food processor add the basil, garlic and pine nuts. Blend until chunky mixture forms, pour in olive oil and continue to blend. If you are adding in cheese or lemon juice do so now and process just to blend. You can salt and pepper now or per individual serving. toss with pasta to coat and add halved cherry tomatoes.

We had ours with some Italian herb and garlic dinner rolls (multi-grain). recipe to follow at a later date.
