For mothers day I whipped up this cake, for me the batter listed below made two totally delicious cakes. The moisture was KILLER.
2/3 cup olive oil
1 1/2 cup AP flour (all purpose)
1 tsp baking powder
1/4 tsp salt
1/3 cup Muscato wine (or other dessert wine)
1/3 cup fresh OJ
1 tsp grated orange zest
1 tsp grated lemon zest
4 large eggs
1 cup sugar
2 TBS confectioners sugar (I made my own using my vitamix)

Whisk together flour, baking powder, and salt in a bowl.
In a separate bowl whisk together oil, wine, OJ and zests.
Beat eggs and sugar with an electric mixer for about 4 minutes or until pale yellow and tripled in volume
add half the dry ingredients and mix on a low speed until incorporated, then add half the wet. Repeat.
Pour batter into prepared cake pans (brush lightly with Olive oil), and bake in a preheated 350* oven for about 50 minutes or until a toothpick comes out clean. Cool in the pan ten minutes then remove. Dust with powdered sugar and top with berries.
Definitely a keeper
