Corn bread

This could easily be made vegan.

1 cup flour
3/4 cup cornmeal
2 TBS sugar
2 1/4 tsp baking powder
3/4 tsp salt

1 TBS Non-dairy butter
2 eggs, beaten
1 cup coconut milk (or other non dairy)
1/4 cup oil or melted non-dairy butter (I use Earth Balance-Soy free)
dash honey

Preheat oven to 400*F

in a medium bowl mix first 5 ingredients

Take the single Tablespoon of "butter" and place it into a 9x 1 1/2 inch cake pan. Place into oven for 3 minutes, remove from oven and swirl around pan

In a separate bowl mix all other ingredients. Stir into dry mixing just until wet.

Pour into heated pan and bake 15-20 minutes.

We had ours with honey butter
