Twice Baked Sweet Potatoes

Sweet Potatoes, or jewel/garnet yams more often here in the states, are abundant this time of the year.

This recipe is easy, fairly quick, and I think scrumptious

3 large sweet potatoes baked until soft.
1/3 cup whipped cream cheese
2 TBS softened butter
1 1/2 TBS brown sugar
1/2 tsp or so cinnamon
dash of ground ginger
couple shakes nutmeg

Method:

Mix all ingredients together.













Scoop out the cooked flesh of the sweet potatoes and mash into the soft mixture. Scoop back into the potato skins and bake 15 min at 350* F.
